A&S Teaching & Learning Community of Practice 2026-27: Internationalizing the Curriculum Through a Global Classroom: Design, Implementation, and Impact of an International Nutrition Module

The International Nutrition Global Classroom is an opt-in module embedded in NFS284: Basic Human Nutrition that aims to internationalize the curriculum through intercultural learning and global engagement. Implemented in Fall 2024 and Fall 2025, the two-week module combines cultural competency training, interactive lectures from international experts, and collaborative assignments involving students from the University of Toronto and partner universities in Ghana. Students apply the UNICEF Framework for the Determinants of Malnutrition to analyze nutrition interventions in low- and middle-income countries and develop recommendations for improvement. Lessons learned on design, student outcomes, and strategies for sustainable implementation will be discussed.
